The van came in as a shell. We laid out the window on the curb side, cut the opening, and framed it in steel so the body would not oil-can when the hatch went in.
Inside: stainless counters, a soiled-dish well, and a Type 1 hood sitting in a crate until the propane run was in. We welded the equipment rail, set the wall skins, and left the floor as diamond plate because that is what holds up.
Food-truck work is just metalwork with a VIN. Same bay as the brackets. Same people opening the door in the morning.
